Vallé has come a long, long way from its humble beginning as a pizza place. Its meaty, well-seasoned crab cakes deserve all the praise that is heaped upon them. Other favorites verge on decadence, such as the char-grilled filet topped with Brie and baked in puff pastry. The Italian gumbo with orzo is a heartwarming dish for any winter night. Sweet memories will linger forever (we hope) for the massively chunk-a-licious beauties that emerge from the laudably excessive kitchen of this former suburban pizza parlor. Possibly matched only by the fat steaks they serve, these crab cakes are extravagant and pure, full of backfin and (like the steaks) priced to match.
